Specialized course aimed at training professionals (in Ecuador and nearby regions) on issues related to bioavailability, metabolism, safety and functional evaluation of bioactive compounds from fruits of Latin America, in order to form a critical mass capable of generating scientific and technological results transferable to the production systems and to society.
