Short Bio
My scientific career started in 1999, in the Department of Science and Technology of Meat and Meat Products and Fish and Fishery Products (Institute of Refrigeration, CSIC). In 2003, I defended my doctoral thesis entitled “Influence of processing on the protein composition and functionality of the muscle of dried salted cod (Gadus morhua). Study of the desalted product”. After 30 months working in the frame of several European and national projects, I continued my research career as a postdoctoral in the Marine Biology Station of Concarneau (Muséum National d’Histoire Naturelle, France). From 2008 on, I work as a Tenured Scientist in the research group INNOVAPESCA (Development, Valorisation, and Innovation of fishery products) in ICTAN. Since 2019, I am the scientific Deputy Director of the Institute.
My research field includes the valorisation of fishery by-products and underutilized species, to obtain bioactive molecules that can be incorporated into food products. This includes its identification, and also the evaluation of the bioactivity in experimental animals, together with the evaluation of the products quality. I also focus my research on the effect of bioactive molecules and preservation technologies on the quality of fishery products (taste, lipid oxidation, presence of melanosis in crustaceans, microbial degradation, etc.).
During my research work, I have coordinated different research projects, and participated in national and international projects and contracts financed by national and international funds. I have published 64 articles in SCI journals (2020) and presented different works at national and international conferences. I am the author of several patents and I have directed several national and international end-of-degree and end-of-master projects.
Moreover, I usually collaborate with national and international research groups, e.g. ItaCyL (Valladolid), University of Navarra, INIAP (Portugal), MNHN and University Polytech Lille (France), CRBT (Algeria), NOFIMA (Norway), and University of Sfax (Tunisia).
