Our objective is the study of nutritional factors that allow healthy aging and that improve the quality of life of the elderly. More specifically, we want to delve into the study of the beneficial health properties of dietary polyphenols. For this we focus both on the study of its bioavailability and metabolism as well as its action at various levels, mainly cardiometabolic, neuronal and visual.

  • Dietary polyphenols and healthy aeging.
  • Interaction of polyphenols with other Food bioactives or micronutrients.
  • Food ingredients and Food products with neuroregulatory activity.

Skills

  • Cellular models of inflammation, endotelial function, intestinal absorption, hepathic metabolsim, retina and neuronal function.
  • Nutritional studies in healthy population.
  • Chromatographic techniques (HPLC-DAD, LC-MS, Qtof and QQQ) for polyphenol analysis,  metabolomics, fatty acids and bille acids and salts in different products and biological samples.
  • Antioxidant activiy in Foods, biological products and cellular models.
  • Biochemistry analysis (ELISA, enzimatc activities,  etc) and molecular biology (Western-blot and RT-PCR).
