Semana de la Ciencia ICTAN 2024

High pressures, gulas and food wastage were the topics discussed.

On the fourth day of the CSIC Science Week at ICTAN, three talks were given to students of Vocational Training in Nutrition and Dietetics at the Leonardo Da Vinci Vocational Training Institute and the MEDAC Training Centre.

The researcher Laura Otero gave the talk ‘High-pressure processed foods: What a stress!’ where she explained what high-pressure food processing consists of, the principles that govern it, the benefits it has on food and the challenges faced by the food industry.

Do you want to know the recipe for ‘Gulas or elvers’? It was given by the researcher Miriam Pérez who explained the differences between elvers and gulas, how the process of elaboration of restructured products is and how to detect the quality of these products.

Finally, the talk given by Ana Veses ‘Food wastage and possible scientific-technological solutions’ dealt with the global and individual problems of food wastage in societies, how we can alleviate it individually and what technological solutions science proposes.
