Guided visit to ICTAN on the occasion of Science Week CSIC

More than 25 ICTAN researchers and technicians have taught in 10 different areas.

As part of the activities planned for CSIC Science Week at the Institute of Food Science and Technology and Nutrition (ICTAN-CSIC), the students of the first year of Bachillerato from the San Gabriel School in Madrid and the students of the Vocational Training Degree in Chemistry and Environmental Health from the José Luis San Pedro Secondary School in Guadalajara enjoyed a guided tour of the centre’s facilities.

After a formal presentation on the CSIC and the main lines of research at ICTAN, the students were taken on a guided tour of the main laboratories and facilities at ICTAN, accompanied by the centre’s scientific and technical staff:

  • Sensory Analysis Unit with Gonzalo Delgado and Tatiana Pintado with the activity and tasting: ‘Sensory Analysis of Beverages: Consumer Acceptability’.
  • Department of Metabolism and Nutrition with Sonia Ramos and María Luisa García where they were able to see the work carried out in the Cell Culture area of the centre and with Jara Pérez a simplification of the process of determining fibre.
  • Department of Technological Processes and Biotechnology with Blanca de las Rivas, Ana Sánchez and Laura Plaza: they were able to see what a molecular microbiology laboratory is like.
  • Department of Characterisation, Quality and Safety with Begoña de Ancos and Lucía Giménez: determination of chlorophylls and carotenoids in plant foods and with Mayte Sánchez, Irene Romero, José David Toledo and Yadhira Flores they explained what molecular markers consist of in the preservation of red fruits.
  • Analytical, Instrumental and Microbiological Techniques Service Unit (USTA) Gonzalo Guerrero and Cecilia Mateos explained the determination of protein content in various foods. In addition, Inma Álvarez, Estela de Vega and Beatriz Diaz discussed caffeine consumption and its analysis in stimulant beverages.
  • Pilot Plant: with Ángel Valbuena where they were able to visit the main machines used in the food industry in the manufacturing and preservation processes.
  • Human Nutrition Unit with Belén Zapatera and Sonia Gómez with the workshop on diet, anthropometry, body composition and healthy lifestyle habits.
